“We need:

500g frozen peas

a white onion

3 carrots

a red pepper

100 ml tomato paste

2 tablespoons clarified butter / olive oil

How do we prepare?

Heat the clarified butter in a saucepan. Finely chop the onion and add it over the butter to harden. Meanwhile, prepare the carrots and peppers. We clean them, cut them into cubes and add them over the hardened onions.

Leave everything to harden for 2-3 minutes, during which time we mix to make sure that the vegetables do not burn. Add 2 cups of water and simmer until you try the carrots with a fork and they are cooked. If the water drops, we can periodically top up with a glass. We add the tomato paste and the peas and let everything boil for another 10 minutes “, said Raluca Rotariu.

Raluca Rotariu, co-founder of Endofoodart and nutrition therapist, comes up with a simple but delicious recipe: shrimp pasta. Let’s see how it is prepared and what you need.

Shrimp pasta. Preparation time: 30 minutes. Gates: 2.

Ingredient:

300g gluten-free pasta

10-15 shrimp

a small white onion

4 cloves of garlic

200 ml vegetable cream for cooking

a yolk

2 tablespoons clarified butter or lactose-free butter

inactive yeast flakes / parmesan for serving

Method of preparation:

Boil the pasta according to the instructions on the package. We make sure to keep two tablespoons of the water in which the pasta was boiled before straining. Heat the clarified butter in a pan and add the diced onion. Let the onion harden for 2-3 minutes, then add the garlic.

Be careful not to let the garlic harden too much, as it will become bitter. Add the liquid cream and let it heat up. Meanwhile, separate the yolk from the egg whites and add the yolk over the liquid cream, stirring constantly until it is incorporated.

Season with salt, pepper and other spices to taste. Over the previously obtained mixture, add the shrimp together with a polish from the water in which they cooked the pasta. Cover everything with a lid and let the shrimp cook for about 10 minutes.

Stir occasionally to make sure the cream doesn’t stick to the pan. If the water has dropped, we can add another polish from the water in which the pasta was boiled. Transfer the pasta over the previously obtained shrimp sauce and serve with inactive yeast flakes or Parmesan cheese.
